Coffee’s history
The worldwide coffee phenomenon of today has it origins, according to legend, in the discovery of the influence of coffee on our body not only by people, but also by animals. One story has it that the unique properties of coffee were discovered in the 9th century by an Ethiopian shepherd boy and his flock of sheep that became unusually frisky after eating the fruit of a nearby coffee tree. The shepherd tried it himself and noticed an inflow of energy that banished his sleepiness and fatigue.
The name coffee comes from Arabic word “qahwa”
Other sources claim that the effects of coffee were first discovered by Ethiopian monks, who found that it allowed them to stay alert and concentrate during their long hours of prayer and meditation.
Because of its Arabic name and popularity in Moslem lands, until the XVI century coffee was known in Christendom as ‘Satan’s drink’. This was hundreds of years before golden rules of coffee brewing were established.
First of all, the fruit of the coffee tree was ground and eaten in the form of a pulp, which unfortunately had a quite unpleasant taste and smell. Later on, in the course of numerous trials and experiments, coffee seeds (‘beans’) were macerated by means of brewing with hot water, and roasted, which was the start of the art of modern coffee brewing. What is more, people discovered that coffee not only boosts vitality, but also raises blood pressure, eliminates sleepiness, regenerates our body and effectively reduces thirst. As the cult of coffee drinking evolved, accompanied by technical advances, the drink preparation process was enriched by the addition of sugar, honey, milk and even sour cream and various spices, such as cardamom, cinnamon and chocolate, improving the taste and aroma of different types of coffee.
